ABSTRACT

Food hygiene and sanitation practices are essential in preventing foodborne diseases and ensuring consumer safety in food establishments. This study assessed the sanitation and hygiene practices among food handlers in selected food stalls in Tuguegarao City. Specifically, it aimed to evaluate the extent of compliance of food handlers with proper hygiene and sanitation standards and identify recommendations that may improve food safety practices within food establishments. The study utilized a descriptive-correlational research design employing the survey method. A total of 100 food handlers from selected food stalls participated in the study through stratified random sampling. Data were gathered using a structured questionnaire focusing on food handling procedures, personal hygiene, sanitation practices, temperature control, and workplace cleanliness. The collected data were analyzed using frequency counts, percentages, weighted mean, and correlational statistical tools. Findings revealed that respondents generally demonstrated strong compliance with sanitation and hygiene practices, obtaining a General Weighted Mean of 1.62 interpreted as “Strongly Agree.” Food handlers highly observed proper food storage, handwashing, reheating procedures, sanitation of utensils, and workplace cleanliness. However, some indicators related to food temperature maintenance obtained relatively lower assessments, suggesting the need for continuous monitoring and training on temperature control practices. The participants further recommended free medical check-ups, vaccination programs, provision of sanitary facilities and protective equipment, regular inspection of utensils, and continuous food safety seminars conducted by health authorities. The study concludes that strengthening health support systems, sanitation facilities, and food safety education can further enhance hygiene compliance among food handlers and contribute to safer food service operations.
